The Best Dang ‘No Bake’ Energy Bites

Back in the fall I made Pumpkin Spice energy bites from A Pinch Of Yum’s Recipe.

What I loved about them is they were super easy to make, a little messy, but easy — they were made from whole foods, AND they actually tasted good.

Now as much as we love that fall feeling, pumpkin spice is just not a year round flavor I care to indulge in. But you know what is? Peanut butter and chocolate.

I took the same concept and tweaked it a little.

Why I love them:

  • Super nutritious, jam packed with carbs, fiber & protein
  • Great option for a Regular Macro Day Snack
  • Will satisfy that sweet tooth
  • Main ingredients are always on hand: oats, coconut, peanut butter, honey, chocolate chips.
  • Kid friendly! You can let your kids help…even if they spill a cup of honey all over the table…
  • My entire family approves.
  • NO BAKE — easy for even the worst of cooks…like me.

What you’ll need:

  • 2 cups  oats
  • 2 cups flaked unsweetened coconut
  • 2/3 cup peanut butter (I use Crazy Richards 100% Peanut Butter)
  • 2/3 cup honey 
  • 1/4 cup chia seeds
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips ( I use Pascha 100% Cacao dark Chocolate chips)

Directions:

  1. Pulse the oats and the coconut until coarsely ground.
  2. Add peanut butter, honey, chia seeds, salt, and chocolate chips.
  3. Pulse again until well-mixed
  4. Roll into balls. (If it’s too dry, just add a little more honey / peanut butter and mix again)
  5. Freeze until solid. Store in refrigerator.
  6. ENJOY
